Spiced lentil daal
- 1 cup lentils (masoor or moong), washed
- 1 onion, chopped
- 2 tomatoes, chopped
- 1 tbsp ghee or oil

- ½ tsp Ayat Food Red Chilli Powder
- Salt to taste

Boil the lentils with turmeric and salt until soft. In a separate pan, heat the ghee and sauté the onion until golden. Add the tomatoes and cook until soft, then stir in the cumin powder and red chilli powder. Let them cook for about a minute so the cumin's aroma fully releases into the oil.
Pour this mixture (called a "tarka") into the boiled lentils and simmer for a few minutes to let the flavours combine. Garnish with fresh coriander and serve with rice or roti.
