A dish where garam masala does the heavy lifting
Simple chicken karahi
- 500g chicken, cut into pieces
- 2 tbsp oil or ghee
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 1 tbsp ginger-garlic paste
- 1 tsp Ayat Food Red Chilli Powder
- 1 tsp Ayat Food Turmeric Powder
- 1 tsp Ayat Food Coriander Powder
- 1 tsp Ayat Food Garam Masala Powder
- Salt to taste
- Fresh coriander and green chillies to garnish
Heat oil in a karahi or heavy pan. Add the onion and cook until soft, then add ginger-garlic paste and cook for a minute. Add the chicken and cook until it changes colour. Stir in tomatoes, turmeric, red chilli, and coriander powder, and cook until the tomatoes break down and the oil separates slightly. Cover and simmer until tender. Just before turning off the heat, sprinkle in the garam masala and stir well. Let it rest for a couple of minutes with the lid on so the aroma settles into the dish, then garnish.
That final sprinkle of garam masala is often what separates a good karahi from a great one.
