Mixed vegetable curry
- 2 potatoes, cubed
- 1 cup cauliflower florets
- 1 carrot, sliced
- 1 onion, chopped
- 2 tomatoes, chopped
- 1 tbsp oil

- 1 tsp Ayat Food Coriander Powder
- 1 tsp Ayat Food Turmeric Powder
- 1 tsp Ayat Food Red Chilli Powder

- Ayat Food Chat Masala to finish
- Salt to taste
Heat oil and saute the onion until golden. Add tomatoes and cook until soft. Stir in cumin, coriander, turmeric, red chilli, and salt and cook for a minute until fragrant. Add the vegetables, mix well, and add a splash of water. Cover and cook until tender. Finish with garam masala and a pinch of black pepper, then sprinkle a little chat masala over the top just before serving for a tangy lift.
It is a simple dish, but it shows just how far a well-rounded spice collection can take a few basic vegetables.
