Classic chicken curry (Murgh Salan)

  • 500g chicken, cut into pieces
  • 2 tbsp oil
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 1 tbsp ginger-garlic paste
  • 1.5 tsp Ayat Food Red Chilli Powder
  • 1/2 tsp Ayat Food Turmeric Powder
  • 1 tsp Ayat Food Coriander Powder
  • Salt to taste
  • Fresh coriander and ginger julienne to garnish

Heat oil and fry the onion until golden brown. Add ginger-garlic paste and cook for a minute, then add the chicken and cook until it is no longer pink. Stir in the tomatoes, red chilli powder, turmeric, coriander powder, and salt. Mix well and let it cook until the tomatoes break down and the oil starts to separate from the masala. This is the sign that the spices are properly cooked through, not just mixed in. Add a little water, cover, and simmer until the chicken is tender and the gravy has thickened to your liking. If you want it spicier, add chilli powder gradually rather than all at once.

Garnish with fresh coriander and ginger julienne. That deep red colour comes almost entirely from the chilli powder and it is a good visual cue for how cooked-in the spices are.
